Chicken Ratatouille

This recipe is a Susie-Original. :) Matt's gone this week, so I can be a bit more adventurous with the food. And in the interest of making my life simpler this is Crockpot recipe!


This was on Low for about 8 hours.

I've used about 1lb of chicken, but it's only me and the girls here. This is a pretty small recipe.

One can of chopped tomatoes and a small onion.


One generous spoon of garlic. I'm a heavy-handed garlic user, so my tablespoon may be too much for you.

The beauty of the crockpot. While I defrosted the chicken, I've put chopped tomatoes, chopped onion, and garlic into the crockpot. I added a teaspoon of rosemary. I would have used mixed herbs (Italian herbs), but I didn't have any.


I have sliced two zucchini [we call them corgettes here] and added them to the crockpot.


Last I've put in the chicken, and popped on the lid.

I stirred it a lot through the day, and about halfway through the day I added two quartered potatoes so I wouldn't have to make something else at the end of the day.

I have no photo of the end result because it was too yummy and I ate it up! I think it's the middle road between cacciatore and ratatouille. I loved that I had all the food into the pot, and I just served it right up onto plates from the crockpot. Simple. Delicious!

[Oh, and for the record, $4.75/kg chicken. It was on sale. I really miss the days of $0.99/lb in the US!]

  2. That looks really yummy! At my bridal shower, I was given a one-pot cookbook, which means you have an entire meal in one dish. Super-crazy easy!
